I didn’t sleep very well last night and have felt off all day. My CPAP’s humidifier has been out of water, so I filled that up today with more de-ionized water (after boiling it to kill any bacteria)… hopefully that helps. I complete a couple of CMA lessons in the morning / early afternoon. It’s nicer out today with some sun and only the occasional flurry of snow. However, the FedEx package that’s been held up by customs is supposed to be delivered today according to the latest tracking update, so I stay inside instead of getting out for a walk (and of course the package never comes).
While I’m waiting, I go online to shop for some thermal socks since my feet have been cold lately. Ireland has a lot of outdoor clothing and equipment stores, but the quality of the websites for their online store vary widely… it’s hard to search for styles, sizes, etc. It also appears that some of the larger outdoor and sport chain stores that have a presence in Ireland are actually based in the UK, and there are notices on their websites saying that shipments from their warehouses may take longer due to post-Brexit delays. I eventually find some socks on Base Camp‘s website; their store is a 5 minute walk away from me, but since “click and collect” is not an option during lockdown, they’ll have to send them to me via a delivery service. Thankfully there’s no additional charge for that!
Later in the afternoon, I have a 2nd interview for the OCCRP job. It’s a quick video call with the associate director I spoke with before plus two consultants who’ve been helping the organisation revamp their financial systems etc. The call seems to go well, and I’m glad I switched into a collared button-up shirt right beforehand (at first it wasn’t clear if it would just be a voice call or video call). I’m expecting there would be several more rounds of interviews / conversations before they make a decision.
For dinner I make a recipe I’ve done before since arriving to Dublin: a blended soup with cauliflower, mushrooms, leeks and blue cheese topped with bacon crumbles + homemade soda bread. The soda bread actually turned out really nice… only 5 ingredients: plain flour, whole wheat flour, salt, baking soda, and yogurt instead of buttermilk. The result was much more moist and sponge-like with the yogurt.
