It’s been a grey, cold Sunday, and as a result I’ve had low energy all day. I haven’t seen apple fritters anywhere in Dublin, and this morning I decide to try making some in the air fryer using a recipe that only uses self-rising flour, cinnamon, sugar, an apple and greek yogurt (plus milk and confectioners sugar for the icing). They turn out decent on the outside (thanks to being liberally sprayed with oil) but a bit doughy on the inside. Other recipes online call for eggs and butter in the dough, which sounds like it might produce better results.
This afternoon I do a little more work on some current job applications and continue to sort through email alerts for new postings. I also do some more research into the Certified Management Accountant (CMA) qualification. If I devote serious time to studying over the next few months, I could be ready to take the CMA tests as early as May. Given that accountancy certifications seem to be much more important here than in the U.S., I’m thinking it might not be a bad investment of time and money.
Later in the day, I talk with my friend O in Strasbourg for awhile over the phone. France has been under a curfew starting at 8:00pm but today it’s changing to 6:00pm. Meanwhile here in Ireland, the new ban on “to go” pints has gone into effect so there aren’t any more crowds of people on the streets. Now that the holidays have passed and the COVID numbers have skyrocketed, the mood seems much more somber and sober (literally and figuratively).
